Nuts & Seeds Granola

This granola is crunchy, high in omega-3s from the nuts and seeds, and refined sugar free (sweetened with maple syrup)! I eat this with milk, on top of yogurt bowls, or just by the handful. The recipe is so versatile, just add your favorite nuts and seeds and enjoy!

Ingredients:

  • 2.5 cups rolled oats (look for GF if needed)

  • 1 cup mixed nuts (I use raw pistachios - shelled, almonds, and walnuts)

  • 1/4 cup raw pumpkin seeds

  • 1 cup unsweetened coconut flakes

  • 1/4 cup ground flaxseed

  • 1 Tbsp coarse kosher salt (or use 1.5 tsp table salt)

  • 1 tsp cinnamon

  • 1/3 cup coconut sugar

  • 1/3 cup maple syrup

  • 1/3 cup olive oil

  • Optional: chocolate chunks, dried fruit

Steps:

  1. Mix coconut sugar, maple syrup, and olive oil in small saucepan. Whisk over low heat until mixture begins to bubble slightly. Remove from heat

  2. Combine all dry ingredients in bowl (except for chocolate chips/dried fruit). Stir to combine.

  3. Pour sugar/syrup/oil mixture over dry ingredients. Stir until mixture is wet

  4. Spread evenly on large sheet pan. Press down gently with the back of a wooden spoon

  5. Bake at 350F for 40 mins of until golden brown. Stir halfway through

  6. Let granola cool completely in sheet pan

  7. Optional: mix in chocolate and dried fruit after mixture has completely cooled

  8. Break into pieces and enjoy! Store in jar at room temp
