GF/Vegan Banana Coffee Muffins

A quick and easy recipe to make just 6 muffins - perfect to satisfy that banana bread craving! Made with wholesome, healthy ingredients, these muffins will fuel you and leave you feeling good!

Ingredients:

  • 1 ripe banana

  • 1 flax egg (1 Tbsp flax + 3 Tbsp cold water)

  • 2 Tbsp avocado oil

  • ¼ c maple syrup

  • ¼ c greek yogurt

  • ½ c oat flour + 2 Tbsp almond flour

  • ½ tsp baking soda

  • ½ tsp baking powder

  • ½ tsp cinnamon

  • 1 tsp instant coffee

  • pinch of salt

  • Optional: chocolate chips - measure with your heart!

Steps:

  1. Mix ground flax with water in small bowl, set aside

  2. Mash banana

  3. Whisk in flax egg and rest of wet ingredients

  4. Add dry ingredients, stir to combine

  5. Stir in chocolate chips, if using

  6. Bake at 350F for 20-25 mins

  7. Enjoy!
